A person view on something is always bias, usually based on their own experience. For her, human gave her a chance to become a noble, more than just demi-human, while centaur creating satyr race since the beginning to become their slave. Of course she look at human more favorably than centaur... And she is not really hate centaur, just "uncivilized" northern centaur. Human kingdom actually have centaur as general and she is ok with that...

@Flamfag123 There were references to the demons' country much earlier on. It's just that the few lines where they mentioned the demons were really glossed over for a variety of reasons, like mistranslation and just being lines that were inconsequential at the time.
