It's risky but it's actually not uncommon for head ladies in waiting to stand up for their mistress if another servant is showing disrespect. It would be more disrespectful if she didn't do this much.

The princess is probably used to standing on the top and expecting people to bow down to her without question, it didn't help that yeon hwa was always passive and complicit due to being raised to be a maid. The princess imo is just selfish and doesn't see far enough into the future, nor does she know / care about the social etiquette on how a servant should be towards their superior since she was always the superior (and as such shes used to running off her mouth if something displeased her)
