I think the kidnapped sister thing is a red herring. She's probably after some kind of reward because her sister's situation isn't so simple.
I think the trick is probably done with strings. That would explain the odd shape of the knives, plus those aren't even the same knives as were on the table shown earlier.
Frankly, Helga was probably in on the trick all along, and was serving as setup and distraction.
