Unlike sake, made by fermenting white rice, traditional amazake uses whole-grain rice and does not contain much alcohol since yeast is not added to the mix.
However, the faster recipe uses sakekasu, or sake lee. As lee is made up of, among other things, the leftover yeast after it converted sugars into alcohol, the end result is in fact alcoholic.
